100% grass-fed "Delmonico" steak. Vaca vieja. Essentially a boneless ribeye.
One of the two most delicious cuts of vaca vieja we have found. Deep rich flavor combined with tenderness creates an exceptionally flavorful eating experience.
Cut roughly 1.25" thick, which allows for a nice caramelized crust and a perfect pink interior.
Cut to 0.75-0.85lb each, frozen. Vacuum sealed and frozen.
