Cut from the pork loin and cured, this Canadian Bacon is firmer and less fatty than traditional bacon. This "meatier", leaner cut is still very tender and has a wonderfully rich flavor.
Cured with water, salt, brown sugar, sodium phosphate, sodium erythorbate, sodium nitrate.
Smoked, sliced and sold in roughly 0.5/lb packs. Vac sealed & frozen.
